You need to install a vent pipe at least 2″ pipe. When you changed the plumbing you created a siphoning effect in the drain line much like the water in a p trap. When we redid our plumbing I had a plumber come to give me advice and that was the first thing he told me was I needed another vent pipe even though everthing was close.

one way to troubleshoot this kind of problem is to disconnect the new pipes from the old. Then pour water down the old pipe even if you have to use a hose to do it. If a few gallons drain just fine then you know it is in the new pipes.

If not you need to look at the old pipes. As somebody else mentioned before it almost sounds like a venting issue.

have him disassemble the drains to inspect, and re-assemble. there has to be traps for each basin. you should not need to consider “vents”, as none were removed.
