Is it possible to convert one sink plumbing to 2?
I have a one sink vanity in my bathroom and would like to convert it to a dual sink system if possible. Is this something that can be done with the plumbing?

Sure. Get a counter top with cut outs for two sinks, that way you can keep all of the water lines and drain lines outside the wall, and inside the cabinet.
Probably neither one of the 2 sinks will line up exactly where the previous one was, so you’ll have to adjust the water and drains a bit.
You’ll need to connect both sink drains to the existing waste line.
You’ll need to run another hot & cold over the second sink.
Yeah it should be a piece of cake. The 2 sinks can be tied into the drain before it goes into the wall (or floor).
Each sink will need a trap before tying into the main drain.
The water supply lines will have to be tee’d to add the second sink, or you can get dual outlet shutoff valves to replace the existing ones.
I’m with the two above answers except that I don’t agree with two traps. If you tie the drains of the two basins together first, then they can go to a single trap and out.
Check in the kitchen for layout if you have a two compartment sink.
